The grapes from each parcel were picked
manually & selected before being crushed, and the mixture was kept between
14-16’C for the week prior to start of fermentation in order to extract colour.
The fermentation was done separately for each variety between 25-28’C with
selected yeasts to ensure the best extraction of flavours
from the grapes.
After fermentation the wine was kept in
stainless steel tanks and put through malolactic
fermentation in order to smoothen the tannins. Afterwards, the wines were aged
in 100% new Romanian oak barrels for 24 months. The blending was done before
bottling and the wine aged was 30 months in bottle and released in November
2013, when we considered that it begin showing its potential. Local &
international grapes join together in harmony.
